Pressure-Cooker Shrimp Bisque
Ingredients
  • 1 pound medium shrimp, peeled, deveined, and halved lengthwise, shells reserved
  • Kosher salt and freshly ground pepper
  • 2 tablespoons cornstarch (or substitute Xantham gum for less carbs)
  • 1 cup dry white wine, such as Sauvignon Blanc
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped celery
  • ¼ cup finely chopped carrot
  • 1 teaspoon sweet paprika
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon unsalted butter
