Chinese Fried Rice
This is my old favorite recipe

Ingredients
  • 3 Tbls oil, divided
  • 4 eggs, slightly beaten
  • ½ cup chopped onion (1 med.) or use green onions
  • ¾ cup frozen peas (or peas and carrots), thawed
  • 1 cup chopped ham (or shrimp, chicken or other protein of choice)
  • 4 cups cooked rice-cooled
  • 2 Tbls soy sauce (more to taste)
  • ½ tsp salt
  • ¼ tsp garlic powder
  • dash white pepper
Steps
  1. In large skillet or wok heat 2 tbls oil over medium high heat
  2. Add eggs, cook and stir until set. Remove from skillet and set aside
  3. Add remaining tablespoon oil to skillet. Add onion, peas and meat. Stir fry 2 minutes
  4. Stir in eggs and remaining ingredients. Heat Through.
  5. Serve hot
