Chilli & Basil Chicken with Steamed Rice
Ingredients
  • 6 garlic cloves
  • 4 red Asian shallots
  • 4 Thai red chillies
  • 1 tablespoon vegetable oil
  • 400 g boneless, skinless chicken breast, cut into 3 cm chunks
  • 2 Makrut lime leaves, finely sliced
  • 1 large handful, Holy Basil or Thai basil leaves
  • ¼ teaspoon white pepper
  • steamed jasmine rice, to serve
  • subheading: SAUCE:
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon light soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sweet dark soy sauce
