Carrot and Lentil Soup (Stovetop + Instant Pot)
Ingredients
  • 1 Tablespoon Olive Oil
  • 1 cup (or) 4 medium size Carrots washed, peeled and cut into rounds or small hunks
  • ½ cup Red Lentils
  • ¾ cup (or) 1 medium size Onion peeled and diced
  • 1 inch Ginger washed, peeled and roughly chopped (I used about 1 ½ tsp jarred ginger)
  • 2 cloves Garlic peeled (I used about 1 tsp jarred)
  • ¾ Teaspoon Paprika
  • ½ Teaspoon Cumin powder/Ground Cumin
  • ½ Teaspoon Coriander powder/ Ground Coriander
  •  
  • Salt as required- it takes about 2 tsp.
  • 2 cups Vegetable Stock (I added a bit more using 1 tsp heaping of Better than Bouillon vegetable with about 2.5 to 3 cups water).
  • ½ to ¾ cups Milk or to desired taste.
