Several Simple Squash Recipes
Ingredients
  • Butternut squash noodle slaw with dried cranberries and lemon.
  • Cubes of butternut squash with chili powder, salt, and some oil. Bake at 400 for about 45 minutes.
  • Baked winter squash, mashed with curry and coconut milk.
  • Pork shoulder braised in Bell's Oberon, with smoked paprika, garlic, and ginger. Beets, rutabaga, parsnip, potato, winter squash and fennel braised in the resulting broth, finished with a touch of apple cider and cooked until glazed.
