Crockpot Braised Pork Roast w/Cumin, Cilantro & Veggies
Ingredients
  • 24 oz pork roast
  • 1 ½ sweet potatoes
  • 1 ½ cups parsnips
  • 1 cup turnips
  • 1 onion, medium
  • 8 tbsp vinegar, apple cider
  • 2 cups chicken broth, low sodium
  • 2 tsp cornstarch
  • 1 tsp cumin seeds
  • ½ tsp cumin
  • 2 tbsp cilantro, fresh
  • vegetable spray
  • salt, pepper
Steps
  1. In a heavy skillet sprayed with cooking spray cook pork roast until browned on all sides, turning occasionally, about 10 minutes.
  2. Peel and cube sweet potatoes, parsnips and turnips. Chop onion.
  3. Place the roast in a slow cooker. Ina a bow, mix sweet potatoes, parsnips, turnip, onion, apple cider, chicken broth, cornstarch, cumin seeds, ground cumin, salt and pepper. Pour over the roast.
  4. Cook 7 to 9 hours in crockpot until pork and vegetables are tender. Serve topped with chopped cilantro.
