Pressure Cooker Cabbage Soup with Kielbasa

Ingredients
- 2 pounds kielbasa, sliced
- 3 tablespoons olive oil
- 1 cup onion, chopped
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 head cabbage, chopped
- 3 cloves garlic, chopped
- 1 ½ teaspoons caraway seeds
- 1 ½ teaspoon fennel seed
- 2 tablespoons Dijon mustard
- 6 cups chicken stock (I used 8 cups broth)
- ¼ cup potato flakes for thickener
- Salt and pepper to taste
- ¼ cup potato flakes (optional as a thickener-add at the very end and stir)
Steps
- Press Soup/Stew button (or 10 minutes high pressure)
- Heat oil in pot and add kielbasa; brown for 3 minutes.
- Add onion, carrot, celery, cabbage, garlic, caraway and fennel. Saute for 5 minutes.
- Add chicken stock and mustard.
- Place lid on pressure cooker and lock, turn pressure valve to CLOSE.
- Once the timer reaches 0, switch the pressure to release valve to OPEN.
- When steam is completely released remove lid.
- Add salt and pepper to taste. Top with fresh parsley. (optional)
