One-Pot Chicken Parmesan Pasta
Ingredients
  • 4 teaspoons minced garlic, divided
  • ¼ cup panko breadcrumbs
  • 4 teaspoons olive oil, divided
  • 1 lb uncooked boneless skinless chicken breast, cut into small chunks
  • 1 small onion, diced
  • 1 medium zucchini, shredded
  • 1 tablespoon tomato paste
  • 3 cups lower sodium chicken broth
  • 15 oz can tomato sauce
  • 8 oz can tomato sauce
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon crushed red pepper flakes
  • 12 oz penne or other medium-sized pasta
  • 2 oz shredded 2% milk Mozzarella cheese
  • 1 oz Parmesan cheese, freshly shredded (I use a box grater)
  • 1 to 2 tablespoons chopped fresh basil
