Lamb & Rosemary Pie with Parsnip Mash

I made this with slow roasted pulled lamb leg, yummy
Ingredients
- 2 tbs olive oil
- 500g lamb mince (alternately slow roast a lamb leg with rosemary, salt & pepper seasoning for 8 hrs on low, cool and pull apart)
- 2 brown onions, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1½ tbs plain flour
- 2 cups salt-reduced beef stock
- ¼ cup balsamic vinegar
- 1 tbs finely chopped rosemary, plus extra sprigs to garnish
- 4 washed white potatoes, peeled, chopped
- 1 parsnip, peeled, chopped
- ¼ Cauliflower florets (or stem)
- 400g can brown lentils, rinsed, drained
- 1 cup frozen peas
- ¾ cup milk
- 50g butter
- 180g vintage cheddar, grated
