Potato Soup
Ingredients
  • 2 ½ cups potatoes
  • ½ cup celery
  • 1 qt. chicken broth
  • ½ cup onions
  • ½ cup powdered milk
  • Salt, pepper and parsley to taste
Steps
  1. Dice the celery, onions and potatoes and add them with all but ½ cup of broth to a heavy saucepan.
  2. Bring to a boil over medium heat (keeping pan partially covered). Simmer over low heat for 40 to 50 minutes, until the vegetables are tender. Season with salt and pepper.
  3. Combine the powdered milk and remaining ½ cup broth (using a whish) and stir into the soup. Simmer over low heat for 5 minutes, stirring constantly.
