Dad’s Vegetable Beef Stew
Ingredients
  • 1 lb beef chunks
  • 1 qt beef broth
  • 1 envelope Lipton Onion Mushroom soup mix
  • Seasoned meat tenderizer
  • Black pepper
  • Flour
  • ½ Medium size green cabbage (diced)
  • 3 medium size potatoes diced
  • 3 large carrots cut up
  • 3 pieces celery cut up
  • 1 large onion diced
  • ½ Pkg frozen mixed vegetables
  • ¼ pkg frozen okra
  • 2 cans diced tomatoes
  • 1 12oz V8 juice can
  • ¼ Cup brown sugar
  • ½ Cup macaroni
Steps
  1. Dust meat chunks with tenderizer, black pepper and flour and brown.
  2. Mix beef, beef broth and soup mix in large pot and simmer until tender.
  3. Add vegetables (hydrated), tomatoes, juice, sugar and pasta.
  4. Cook 1 ½ hrs approx.
  5. Add salt if needed to taste.
