Butternut Squash Soup Recipe with Cauliflower
This vegan and gluten free soup is so easy to make and has incredible flavor!
Ingredients
  • 2 teaspoons avocado oil
  • 1 onion, diced
  • 2 teaspoons minced garlic
  • 20 ounces cubed butternut squash
  • 10 ounces cauliflower florets
  • 3 cups low sodium vegetable broth
  • 1 tablespoon dried thyme
  • 1 teaspoon dried tarragon
  • 1 ½ teaspoon salt
  • ½ teaspoon black pepper
  • pinch of red pepper flakes (optional)
  • ½ cup canned coconut milk
