Apple Cinnamon Baked Oatmeal Cups | Thm: E

  • 1 ½ cups cashew milk
  • 4 egg whites (or ½ cup liquid egg whites)
  • 2 tsp vanilla extract
  • 2 cups unsweetened applesauce
  • 1 banana, mashed
  • ½ cup xylitol
  • 3 ½ cups old-fashioned oats
  • 1 tsp mineral salt
  • 2 tsp baking powder
  • 1 tsp xanthum gum
  • 1 Tbsp cinnamon
  • Instructions
  • Pre-heat oven to 350 F. Line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk cashew milk, egg whites, vanilla, applesauce, mashed banana, and xylitol together. In a separate bowl, stir oats, salt, baking powder, xanthum gum, and cinnamon together. Add to wet ingredients and stir until everything is well incorporated.
