Matt Moran's (Very Arty) Pumpkin and Sage Potato Gnocchi
Ingredients
  • 2kg raw potatoes (around 4kg cooked)
  • 250g flour
  • Pinch of nutmeg
  • Pinch of salt
  • 600g butternut pumpkin, diced
  • 50ml extra virgin olive oil
  • Pinch of pepper
  • Half bunch sage leaves
  • 5g (1 clove) garlic, sliced
  • 5g large red chillis, diced
  • 100g baby cavalo nero (or baby spinach)
  • subheading: Pangrattato:
  • 2g (½ clove) garlic (sliced)
  • 40g extra virgin olive oil
  • 50g panko breadcrumbs
  • A few stalks from your bunch of sage
  • Salt
  • Pinch of chilli flakes
