Baked Butter Beans

Ingredients
  • 1 large can butter beans (16oz)
  • 2 strips bacon
  • 1 tbsp bacon drippings
  • ¼ cup chopped onion
  • 2 tbsp brown sugar
  • ¼ tsp dry mustard
  • ¼ tsp black pepper
  • ¼ cup liquid from the beans
Steps
  1. Drain the beans reserving the liquid. Set both aside
  2. Cook bacon until crisp, drain and crumble.
  3. Leave 1 tbsp of the bacon fat in pan and cook onion until tender.
  4. Combine beans, bacon, onion, seasonings and ¼ cup liquid from the the beans. Put all in a small greased casserole.
  5. Bake uncovered 30 minutes in 350º oven. If beans become dry add more of the reserved liquid.
