Vanilla Cupcakes (That Actually Stay Moist)
Ingredients
  • 1 cup or 150grams plain / all purpose flour (cake flour OK too, Note 1)
  • 1 ¼ tsp baking powder (NOT baking soda, Note 2)
  • ⅛ tsp salt
  • 2 large eggs (50 to 55g / 2 oz each), at room temp (Note 3)
  • ¾ cup caster / superfine sugar (granulated/regular ok too, Note 4)
  • 60g / ¼ cup unsalted butter , cut into 1.5cm / ½” cubes
  • ½ cup milk , full fat (Note 5)
  • 2 tsp vanilla extract , the best you can afford (Note 6)
  • 1 ½ tsp vegetable or canola oil (Note 7)
