Portobello Mushroom Bowl With Squash

Ingredients
  • 2 lg portobello caps
  • sundried tomatoes
  • red or yellow onion
  • butternut squash
  • yellow squash
  • brown rice
  • spinach
  • pumpkin seeds
  • avocado slices
  • garlic, salt sub, cilantro
  • coconut oil/butter
  • Tahini Sauce dressing: tahini sauce, honey, rice vin, equal, water, garlic, ginger
Steps
  1. Saute vegetables in ½ coc oil ½ butter (or toss with oil/melted butter and roast) and sprinkle on seasonings.
  2. Add chopped spinach to one side of bowl, ½ c rice to other side.  Top each side with vegetables. and avocado slices.  Drizzle on tahini dressing and sprinkle with pumpkin seeds.
