  • 227 grams (2 cubes or 1 cup) cold salted butter
  • 180 grams ( ¾ cup) of fresh sourdough starter discard at 100% hydration
  • 50 grams ( 3 Tablespoons plus 1 teaspoon) of full fat sour cream.
