Teriyaki Steak Skewers with Asian-Style Greens
Ingredients
  • 2 lbs. (4 portions) lean diced steak, with fat trimmed
  • 1 large bok choy, shredded
  • 4 c kale, shredded
  • 2 spring onions, sliced
  • 1 cucumber, deseeded and diced
  • 1 tbsp sherry vinegar
  • 1 tsp olive oil
  • 1 tsp soy sauce
  • 1 red chile, deseeded and thinly sliced (optional)
  • subheading: For the marinade:
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp honey
  • 2 thumb-sized piece of fresh ginger, grated
