Apple Cake
Ingredients
  • 170g butter
  • ¾ cup sugar (180g)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups self raising flour
  • 1 large tin apples
  • Cinnamon for sprinkling
Steps
  1. Pre-heat Oven to 160°
  2. Cream butter and sugar 40sec sp 3.5
  3. Add eggs one at a time until just combined sp 4
  4. Add vanilla & flour mix 15sec/sp 4
  5. Knead function 40 sec
  6. Turn out mixture onto bench and knead until combined.
  7. Cut mixture in half, wrap in plastic and refrigerate to make more workable
  8. Press mixture out onto pizza tray ( depending on the size, you may have enough to do two)
  9. Cover base with Apple, leaving enough gap around edge to press top and bottom together. sprinkle with cinnamon
  10. Roll out remaining half of mixture between glad wrap or baking paper and place over apple mixture
  11. Press sides together and prick top a few times with a fork to let any moisture from apples escape.
  12. Place on middle shelf of pre-heated oven and bake for 30 minutes.
  13. You may need to leave a bit longer for the top to brown and allow most of the moisture to escape.
