Sticky Date Puddings with Caramel
Ingredients
  • 250 g pitted dried dates
  • 1 cup self-raising flour
  • 50 g butter, chopped
  • 50 g butter
  • ½ cup double thick cream, to serve (to serve)
  • 1 tsp bicarbonate of soda
  • ⅔ cup cream
  • 2 free range eggs
  • ½ cup firmly packed brown sugar
  • ⅔ cup firmly packed brown sugar
  • You can also cook this mixture in a greased and lined (sides and base) 22cm round (6cm deep) cake tin. Bake for 45 minutes or until a skewer inserted into centre comes out clean
