Halibut in Artichoke and Tomato Sauce
Ingredients
  • 1 tablespoon olive oil
  • 1 large shallot, chopped
  • 2 cloves garlic, minced
  • 1 can artichokes, hearts or bottoms
  • ¼ cup white wine
  • 1 cup water
  • 1 can fire roasted diced tomatoes
  • 1 tablespoon capers
  • 1 tablespoon olive oil
  • 4 (6-ounce) halibut fillets
  • ¼ teaspoon coarse sea salt
  • ¼ teaspoon freshly ground black pepper
