Ingredients
- 1 lb. boneless skinless chicken breasts in 1" chunks
- ½ cup green bell pepper in ½" squares
- ½ cup red bell pepper in ½ inch squares
- ½ cup yellow bell pepper in ½ inch squares
- 1 cup fresh pineapple in ½ inch chunks (or canned pineapple, drained)
- ½ cup onion in ½ inch squares, and pieces separated
- 3 T. oil
- ¼ cup water or pineapple juice
- subheading: Marinade:
- ½ T. light soy sauce
- ¼ tsp paprika
- ¼ tsp pepper
- 1 T. cornstarch
- Salt (to taste)
- subheading: For Sweet and Sour Sauce:
- ½ cup brown sugar
- ½ cup tomato ketchup
- ⅓ cup cider vinegar or rice vinegar
- 1 T. light soy sauce
- 2 T cornstarch (diluted with 4 T. water)
