Spinach Brownies
Ingredients
  • 12 to 16 ounces frozen chopped spinach, thawed (see Recipe Notes)
  • 1 cup  all-purpose flour or  gluten-free flour
  • 1 teaspoon  salt (or to taste)
  • 1 teaspoon  baking powder
  • 2 eggs
  • 1 cup milk
  • ½ cup (8 tablespoons) butter, melted
  • 1 medium onion, chopped
  • 8 ounces shredded mozzarella cheese

  • You can use fresh spinach instead of frozen. Use 12 to 18 ounces that's been cut and steamed until soft.
