Carin's White Chili Crockpot
Warning- this recipe is addictive!
Ingredients
  • Carin's Version- Add to crockpot.
  • 1 pound chicken
  • 1 jar salsa
  • 1 can Bushs white chili beans in mild sauce, puréed in food processor
  •  
  • Shredded Mexican Cheese
  • Frozen Corn
Steps
  1. Spray Crockpot and add chicken breasts, salsa and puréed beans. Cook on high till you can shred the chicken.  Shred chicken on a plate and return back to slow cooker.
  2. Add shredded mexican cheese and bag of frozen corn and cook on high till cheese melts.  Add a little chicken broth if needed for thinner consistency.
  3. Salt and pepper to taste if needed.  Add red pepper or chili powder if desired.
  4. Enjoy.
  5. I used a pound of frozen chicken breast. After cooking it on high for 3 hours, I was able to shred it in the slow cooker with a whisk.
  6. I used one jar of Stonewell Kitchen Pinapple Chipotle Salsa and one can Bush's White Chili Beans Great Northern Beans in mild chili sauce. I pureed the beans in food processor and then pour that mixture into the crockpot on top of chicken.
  7. Serve in bowl, or with sour cream, or in a wrap, or with chips. Leftovers are great for nachos or in a wrap as a sandwich.
