  • 1 ½ lbs boneless, skinless, chicken thighs

  • Romain or butter lettuce leaves
  • cooked brown rice, quinoa, or cauliflower rice
  • red onion, sliced
  • avocado, sliced or diced
  • fresh pineapple chunks
  • fresh lime wedges, to garnish
  • cilantro, to garnish
