Portobello Mushroom Risotto (Pressure Cooker)
Ingredients
  • 1- 8oz package of portobello mushrooms, roughly chopped
  • 4 tablespoons olive oil
  • 3 tablespoons butter
  • 1 medium onion, chopped
  • 2 cloves of garlic, chopped
  • ½ teaspoon thyme
  • 1 ½ cups arborio rice
  • 4 cups chick or vegetable stock
  • salt and pepper
  • ⅓ cup cream
  • ½ cup parmesan cheese
  • 1 tablespoon dark soy sauce (or 2 teaspoons regular soy sauce)
