Blueberry Breakfast Bake
Just pulled out of the oven.....blueberry breakfast bake.....we love them cold! Perfect breakfast for tomorrow :)
Ingredients
  • note: DISCLAIMER* Please note, I change it around a bit each time depending on what I want. I also mill my own spouted wheat flour so you may not need as much liquid. So use your own judgement. I have made it sugar free, with sugar, sometimes even with stevia...... I have also made it with every different fruit for the top imaginable :) I got this idea online a whiiiiiile ago. No clue where.

  • Will make TWO 9×13 glass pans. So if you want less, adjust accordingly.

  • note: 4 cups whole wheat flour
  • note: 4 cups rolled oats
  • note: 1.5 tbsp baking powder
  • note: 2 tsp baking soda
  • note: ¼ tsp salt
  • note: 3 tbsp powdered ginger (have used cinnamon and nutmeg before)
  • note: ½ cup sugar. (I have left sugar out before....so use whatever ya want)
  • note: 4 cups water  (have used plant milks as well but hey.....water is cheaper)

  • Sometimes I also like to add vanilla extract! Like a tbsp or so.

  • I put all dry ingredients in my food processor and mix it around. Then dump in water and mix again. If you want it chunkier.....premix and then add the oats so they stay mostly whole. Divide between both pans and then cover with whatever fruit ya want! I also like to sprinkle with extra rolled oats for an extra crunch. I've even put slivered almonds on the top as well. 400 degrees for 30 minutes. We like them better cold.....but not bad warm either.
