Savory Soft Boiled Egg Breakfast Bowl
Ingredients
  • 1 soft boiled egg
  • wilted spinach
  • ½ c brown rice or ¼ sweet potato cubes or slices
  • ¼ avocado
  • broiled glory tomatoes
Steps
  1. Toss tomatoes in oil, salt, pepper, garlic.  Broil for about 4 min till slightly charred.
  2. Toss sweet potato in oil, season and roast.
  3. Bring water to boil, add eggs, cook 30 seconds, then cover, remove from heat, and let cook in water for 6 minutes.
  4. Wilt spinach in oil.
  5. Cut eggs in half and scoop out or peel and halve.
  6. Layer all ingredients in bowl and serve.
