Fish Steaks Poached in White Wine

Ingredients
  • 2 c dry white wine
  • 2 c water
  • 2 tbs sherry, rice wine, or white vinegar
  • 1 tsp salt
  • 10 peppercorns
  • 10 coriander seeds
  • 2 whole cloves
  • 1 bay leaf
  • 1 clove garlic
  • Several sprigs fresh parsley, thyme, or tarragon
Steps
  1. Bring ingredients, without fish, to a boil and simmer 5 minutes
  2. Add fish and cook until done ~8 minutes
