Ingredients
  • ⅓ cup olive oil
  • ¼ cup fresh lemon juice
  • Zest of ½ lemon
  • 2 teaspoons Dijon mustard
  • 1 teaspoon maple syrup (or honey)
  • 2 heaping tablespoons finely chopped shallot
  • 2 heaping teaspoons finely chopped fresh thyme leaves (you don’t have to be insane about using absolutely nothing but the leaves but don’t include woody stems)
  • Pinch cayenne
  • Salt
  • Freshly ground black pepper

  • Kernels from 2 large or 3 small cobs of roasted corn (you want to end up with 2 cups roasted corn kernels; method for roasting is below)

  • 2 cups cooked farro (from 1 cup uncooked, depending on type; check package instructions)
  •  
  • 2 cups cherry-tomato halves
  •  
  • ½ cup crumbled feta (don’t get the pre-crumbled stuff; it’s dry and sad)
