Cranberry Orange Blender Muffins
Ingredients
  • 1 large orange
  • 1 ½ cups old-fashioned oats (13 fp)
  • 1 cup unsweetened applesauce
  • ½ cup all-purpose flour (6 fp)
  • ½ cup egg whites or fat-free liquid egg substitute
  • 2 T light whipped butter or light buttery spread (5 fp)
  • 1 tbsp. Truvia spoonable no-calorie sweetener (or another natural brand that’s about twice as sweet as sugar) (changed from original recipe)
  • 1 tsp. vanilla extract
  • 1 ½ tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. baking soda
  • ¼ tsp. ground ginger
  • ⅛ tsp. salt
  • ⅓ cup sweetened dried cranberries, chopped (6 fp =34 g) (Or less sugar cranberries 50 g = 6 fp)
  • 3 T Coconut Sugar (8 fp)
