Sausage, mash, and cider onion gravy
Ingredients

  • 6x Sausages (I used a trio of sausages from @macburnhamfamilybutchers - Cumberland, smokey IPA and black pudding)
  • Olive oil

  • 6 tablespoons butter
  • 500ml Cider
  • 3 medium onions, thinly sliced
  • 250ml chicken stock (2x stock cubes)
  • 1 tsp Worcestershire sauce
  • 1 tbsp fresh thyme
  • salt and ground black pepper to taste
  • 50g Unsalted Butter
  • subheading: Mash:
  • 600g Red Duke of York or Maris Piper Potatoes
  • 100g Unsalted Butter
  • 100ml Milk
  • Salt to taste
