  • 16 ounces shredded Monterey Jack cheese (about 4 cups)
  • 1 cup vegetable oil
  • Twelve 6-inch flour tortillas
  • 1 teaspoon chopped cilantro, for garnish (optional)
  • Sour cream, for serving
  • Sliced avocado, for serving
