Chicken Florentine
Ingredients
  • 2 ( 10-ounce) boneless, skinless chicken breasts
  • 1 ½ teaspoons kosher salt

  • ¼ cup olive oil, divided
  • 2 tablespoons unsalted butter, divided
  • ¼ cup all-purpose flour
  • 8 ounces fresh cremini mushrooms, trimmed and sliced ( 3 cups)
  • 1 large shallot, finely chopped ( ¼ cup)
  • 3 garlic cloves, finely chopped
  • 1 teaspoon fresh thyme leaves
  • ½ cup dry white wine
  • 2 tablespoons dry sherry
  • ½ cup chicken stock
  • ¾ cup heavy whipping cream
  • 4 cups packed fresh baby spinach ( 5 ounces)
  • 1 ounce Parmesan cheese, grated (about ¼ cup)
