Island treat
Ingredients
  • Ti leaves or Saran wrap
  • 2 cups peeled and grated raw wetland poi taro** (heaping and packed tightly)
  • ½ cup coconut milk
  • ¾ cup raw sugar
Steps
  1. Spray PAM non-stick cooking spray on a 6x6x2 inch pan or loaf pan and line with ti leaves. Or line with Saran wrap with enough to overlap and seal.
  2. In a medium bowl stir together grated taro and raw sugar.
  3. Add coconut milk.  Make sure you mix well.
  4. Pour into pan and cover tightly with ti leaves or Saran wrap. Cover with 2 or 3 layers of paper towel to absorb moisture and then foil.
  5. Close and seal your lid ..set your pot to Manual High Pressure for 150 minutes
  6. Allow for a full NPR
Notes
  • ** When grating the taro it is probably a good idea to use rubber gloves... may cause your hands to itch.
