John Wayne Casserole ( or Southern Living Cattle Drive Casserole)
UMMC cafeteria favorite
Ingredients
  • 1 pound ground beef, cooked and drained well (use 80/20 or leaner) can sub ground chicken, turkey etc.
  • 1 (1.25-ounce) packet taco seasoning (or 3 TBL homemade see notes)
  • 4 ounces sour cream
  • 4 ounces mayonnaise (can sub cream of mushroom soup if averse to mayo)
  • 8 ounces Cheddar cheese, shredded and divided or pepper jack, colby jack, etc)
  • 1 yellow onion, sliced or chopped
  • 2 tsp minced garlic
  • 2 tomatoes, sliced or diced (or a can of Rotel tomatoes or 15 oz diced tomatoes or fire roated WELL DRAINED)
  • Smoked paprika - ½ to 1 tsp
  • 1 small can of chopped green chili
  •  
  • 2 cups biscuit mix *see recipe for homemade mix
  • OR double recipe and use a box of Red Lobster cheddar bay biscuit mix mixed with ¾ cup warm water and pressed into dish
  •  
  • subheading: Opt:
  • 1 bell pepper, diced or ½ cup chopped poblano chile
  • 1 (4-ounce) can sliced jalapeno peppers drained and/or
  • canned corn
  •  
  • Toppings: salsa, sour cream, guacamole
  • Add some variety with toppings, from ripe avocado or diced tomatoes, to lime wedges, fresh cilantro, sour cream, salsa, , guacamole
