Patty Pan Squash Burger with Turnip & Radish Chips and Cauliflower Hummus
Juicy Burgers without all the Fatty Bread

Ingredients
  • 10 oz Beef
  • 1 Whole Egg
  • ½ cup of Onion (chopped)
  • 2 Garlic cloves (minced)
  • 2 Patty Pan Squash (Sliced thick)
  • 1 Bunch of Radish
  • 2 Turnips
  • Nutritional Stacy's Hummus
  • 3 Tbsp of Healthy Fat (Coconut oil, Grapeseed or Avocado oil)
Steps
  1. Start by adding your Healthy Fat oil in the bottom of your pan. Add your garlic and let cook till it becomes fragrant. Add in your chopped onions and let cook to desired consistency. I personally like them a little caramelized so when they have a little char like coloring.
  2. Pre-heat your oven to 400 degrees. Slice up your Radish and Turnips to desired consistency (I used a mandolin). Toss the slices in your 1 tbsp of your healthy fat choice (coconut oil was really good for these). Then lay out onto 2 cookie sheet. Be sure that none of your chips are over lapping. Whisk your salt and pepper together and then add it  to your chips. Bake in the oven between 10 to 15min. (the Radishes take a little longer so if you need to remove your turnips and allow the radish to continue to cook do so). You want a nice crispy crunch from your chips.
  3. Once your garlic and onion are finished cooking throw them in a mixing bowl and add your Raw Beef. Mix the cooked onion and garlic into the beef, add your egg and mix. Now you can form your burgers. Be sure to add a thumb imprint in the middle of your burger to help with the cooking process. You can now throw your burgers on the grill (you can also use a cast iron skillet if you want to do this inside).
  4. Next take your sliced patty pan squash and brush a little of your healthy fat(I like the avocado oil for this) on either side of the squash. Grill on both sides till you see nice grill marks on the squash.
  5. Add your tomato, lettuce, onion and dijon mustard (all if you would like) to your burger. Then add your side of chips and if you would like Hummus and you're now ready to Enjoy!

  • This is a great way to cure that craving for a nice juicy burger with a bun. The Squash really helps trick you into thinking you are actually eating a bun!
