Fasolada-Inspired Greek Bean Stew
Ingredients
  • 1 pound (2½ cups) dried white beans (cannellini or navy beans), soaked overnight and drained
  • 3 to 4 carrots, diced
  • 1 large onion, diced
  • 3 stalks of celery, diced
  • 2 cloves of garlic
  • 1 14.5-ounce can tomato, diced
  • ½ cup extra-virgin olive oil
  • 1 teaspoon paprika (hot or sweet)
  • Salt and Pepper to taste
