Grandma Tillie's Portuguese Bean Soup
Great use for ham bone leftovers
Ingredients
  • Hamhocks or leftover ham bone
  • 2 inch ginger (smash with side of knife)
  • 3 carrots peeled and chopped
  • 2 Portuguese sausage chopped
  • 2 potatoes peeled and chopped
  • 1 cup elbow macaroni
  • 1 can kidney beans
  • ½ head cabbage
  • tomato sauce
Steps
  1. Cover ham bone with water add ginger and bring to boil. Simmer until meat falls off bone
  2. Add carrots and Portuguese sausage
  3. When carrots are ½ done add potatoes
  4. When potatoes are almost done add cooked macaroni, kidney beans, cabbage and tomato sauce
  5. Season with salt and pepper.
