Sweet Potato Souffle
Ingredients
  • -5 Medium sweet potatoes, peeled and chopped
  • - 1 stick of butter
  • -2 large eggs
  • -⅓ tsp cinnamon
  • -1 ½ tsp vanilla
  • -⅔ cups of brown sugar
  • -½ cup granulated sugar
  • -½ cup of milk
  • -pinch of salt
  •  
  • subheading: TOPPING:
  • -1 ½ cups of marshmallows
  • - ½ cup of finely chopped pecans
  • -¼ cup of flour
  • -¼ stick of butter
  • -½ cup brown sugar, sprinkled
Steps
  1. 1) Preheat the oven to 350 degrees.
  2. 2) Microwave sweet potatoes until soft
  3. 3) Peel sweet potatoes and mash until smooth.
  4. 4) Add the eggs, sugar, brown sugar, vanilla, milk, and salt. Combine well with hand blender. Pour mixture into baking dish.
  5. 5) For the topping, stir together the pecans, flour, butter, and brown sugar until combined. Cover half the sweet potatoes with the pecan mixture.
  6. 6) Cover the other half of the sweet potatoes with marshmallows and sprinkle brown sugar.
  7. 7) Bake the casserole for about 40 minutes, or until slightly browned.
