Chocolate cupcakes
Ingredients
  • 1 ½ cups cake flour
  • ¼ tsp baking soda
  • 2 tsp baking powder
  • ¾ cups cocoa powder
  • ¼ tsp salt
  • 3 tbsp butter, soft/melted
  • 1 ½ cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • ⅓ cups mayo
  • ⅔ cups buttermilk
Steps
  1. Preheat oven to 350° and put paper liners in muffin tin
  2. Mix butter and sugar until sugar is wet, somewhat creamed. Add eggs in one at a time. Add vanilla, salt, powder, sugar, and mix. Mix in cocoa powder and mayo. Alternate buttermilk and cake flour.
  3. Bake for 15 to 25 minutes, until toothpick comes out clean
