Slow Cooker Tom Kha Soup
Ingredients
  • 4 cups chicken broth
  • 2 cans (13.5 ounces each) coconut milk
  • 2 stalks lemongrass, bruised and chopped into 2-inch pieces
  • 4 slices galangal (or ginger, if unavailable)
  • 4 kaffir lime leaves, torn
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 8 ounces mushrooms, sliced (such as straw mushrooms or button mushrooms)
  • 1 red chili, thinly sliced (adjust according to desired spice level)
  • 1 medium tomato, diced
  • 1 small onion, thinly sliced
  • ΒΌ cup fresh cilantro leaves, chopped (for garnish)
  • Lime wedges, for serving
  • Cooked rice or noodles, for serving (optional)
