Warm Cocoa Pudding with Candied Pecans

Obsessed with pears at the moment...especially pear cake. New favourite ingredients: fennel root and fish sauce. Also, gluten-free, though I do save recipes that aren't.

Candied Pecans

1 large egg white

2 tablespoons sugar

1 cup pecans

Pudding

1½ cups heavy cream

1½ cups whole milk

4 tablespoons unsalted butter

1 teaspoon vanilla extract

2 large eggs

½ cup sugar

2 tablespoons plus 1 teaspoon cornstarch

2 tablespoons unsweetened cocoa powder

1½ teaspoons kosher salt

4 ounces chopped chocolate (at least 70% cacao)
