Ingredients
  • 4 tablespoons (½ stick) salted butter
  • 2 pounds Italian sausage (sweet, hot or a mix of each), sliced into ½-inch pieces-I used a mix
  • 9 cloves garlic, minced or pressed
  • 1 ½ cups dry white wine (like a chardonnay), divided (see Jeff's Tips)
  • 1 ½ cups of chicken or garlic broth (e.g Garlic Better Than Bouillon)-I used Garlic BTB
  • 2 teaspoons dried Italian seasoning
  • 1 pound orecchiette (frisbee/ear-shaped pasta, see Jeff’s Tips)
  • 10 to 20 ounces grape or cherry tomatoes
  • 5-8 ounces baby spinach
  • ½ to 1 cup of Parmesan cheese-I thought a half cup was enough
