Ingredients
  • Cherry Tomatoes
  • Fresh Mozzarella cheese
  • Large fresh basil leaves
  • Extra virgin olive oil for drizzling
Steps
  1. Slice a thin sliver off the bottom of each cherry tomato (so it will sit upright and not topple over).
  2. Slice about ¼" off the top of each cherry tomato (makes it easier to scoop out the center).
  3. Using a ¼ teaspoon measuring spoon, scoop out the center of the tomatoes.
  4. Slice the large basil leaves in half lengthwise.
  5. Cut the cheese into ½" cubes or into a size that will just fit into the tomatoes.
  6. Push the center of half a basil leaf into the center of a tomato, with the ends of the leaf sticking out the top.
  7. Push a square of cheese into the tomato on top of the basil leaf.
  8. Drizzle olive oil on top.
