  • 8 boneless, skinless chicken thighs, about 2 1⁄2 pounds total, each cut into 4 or 5 uniform pieces
  • Vegetable oil or oil of choice, for frying
  • 3 1⁄ 2 cups panko bread crumbs
  • 2 large eggs
  • Lemon wedges, for garnish
