Lobster medallion Salad with honey chilli sauce
From AWW Light & Luscious Summertime cookbook
Ingredients
  • Lobster tails
  • ½ Cup honey
  • 2tsp chilli sauce
  • ⅔ Cup dry white wine
  • 1tsp grated ginger
  • 2 carrots
  • 2 zucchini
  • 1tsp cornflour
  • 2tsp water
  • 1small fresh red chilli chopped
Steps
  1. Remove lobster flesh from shells and cut into 1cm slices
  2. Combine honey, chilli sauce wine and ginger. Pour half into wide pan and reserve the rest
  3. Add lobster to the pan, bring to the boi, reduce heat and simmer until lobster is tende.
  4. Or
  5. Microwave lobster 5 mins
  6. Thinly slice vegs and microwave before refreshing under cold water.chill
  7. Erie lobster on top of veg and drizzle with remaining dressing which can be thickened with cornflour
