Turkey Piccata Panini
Ingredients

  • 3 tablespoons packed capers, drained and chopped*
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon kosher salt
  • 1 teaspoon lemon zest, from 1 lemon
  • 1 tablespoon freshly squeezed lemon juice, from ½ a lemon
  • 2 tablespoons olive oil
  • 2 tablespoons chopped Italian parsley
  • subheading: For The Sandwich:
  • 4 slices sourdough bread
  • 6 slices provolone cheese
  • ⅓ pound thinly sliced turkey breast
  • ½ cup baby arugula
  • 2 to 3 tablespoons olive oil
  • note: Cook’s Note: To use salt packed capers instead of brined capers, rinse the salt off of the capers and then soak them in cold water for 10 minutes. Drain well.
