JJ Grilled Chicken over Roasted Vegetable Hummus
Ingredients
  • 1¼ lb chicken breast
  • 1 tsp sea salt, divided
  • ½ tsp garlic powder
  • 2 tbsp extra-virgin olive oil, divided
  • 1 cup cauliflower florets
  • 1 zucchini, diced into cubes
  • 1 yellow squash, diced into cubes
  • 1 medium red onion, chopped
  • 1 cup sliced fennel bulb
  • 1 tbsp fresh parsley, chopped fine
  • ½ cup jarred grilled artichoke hearts, do not cook
  • 1 cup cherry tomatoes, sliced in half
  • subheading: For the Hummus:

  • 5 tbsp hot water, or more
  • 1 cup chickpeas
  • 2 tbsp tahini
  • 1 clove garlic, minced
  • ½ tsp cumin
  • ½ tsp sea salt

  • ¼ tsp smoked paprika, for garnish
